Hydration....I agree with Rkt.
It's a good idea to make sure you are drinking plenty of water hours
before the gig. I drink water and sometimes grapefruit or pineapple juice
during the job.

Coffee also tightens the vocal chords and can be hard on your singing.

And don't worry so much about 'train wrecks'. They happen to everyone.
And sometimes the minor ones clear the way for some interesting playing.

We've had a few jobs this past summer where the supplied sound person has
almost single handedly killed us and or the audience. Screaming high end
feed back through the first third of the opening set, so bad that I
thought I would never need root canal beacause all my nerves had withered
and died. Sometimes the trains wrecks are not your doing. And it means
something in your evolution as a performer to take this stuff in stride,
do your show and keep your audience interested. Then, afterwards, you can
spike the sound guy's gas tank on your way out of town....
