Rod,

At a public speaking course I took once, the instructor told us to always
have a glass of room temperature water handy with some lemon in it. The
lemon stimulates the saliva glands and helps to cut the sticky stuff in
your mouth and throat that seems to always happen when you're nervous.
Cold water is no good because that tends to close up the saliva outlets and
can actually make the problem worse.
