First and foremost, I'd say that this is a bit like asking what
topping is best on pizza. The Bullet and the Astatic are certainly the
default mics for most players, and the difference betwen them is a
matter of taste. Consider them pepperoni and italian sausage.

I have one of each, and switch between them according to my mood. The
Astatic is smaller, more easily cupped, and gives me a much brighter
sound. The Shure is darker, fuller, and is so tough it can be used as
a jack stand if necessary.

I don't much care for either with a volume pot.
